Soon we could lack its namesake cheese to eat –
Aged to perfection in protective wax
To take its flavor profile to the max,
Robust yet subtle, nutty, caramel,
As complex as its appetizing smell.
Alas, Dutch cows that chomp the region’s grasses
Could soon feel climate change upend their arses.
If dairy pastures sink beneath the sea,
There won’t be any milk farmed locally.
Gouda will smack of played-out history.
